City & Guilds Certificate in Food Preparation and Cooking - IVQ1

Develops and integrates into the students the most basic understanding of the techniques and practices of the Culinary Arts. Students are able to learn the most common food and safety hazards at work. Food preparation methods, cost control operations, storage and care of materials and nutrition at work are also included in this level. Different cooking methods, as well as cold food preparations and basic pastry techniques are also discoursed in theory and applied in practical classes.


City & Guilds Diploma in Food Preparation and Cooking (Culinary Arts) - IVQ2

Higher levels of food and safety hazards are stressed in this program. The significance of kitchen maintenance and design are also included as well as budgeting, costing and control. Menu planning, nutrition and dietetics are also discoursed. The preparation, cooking and service of meat, poultry, fish, shellfish, stocks, sauces, soups, pulses, vegetables, farinaceous, pastry, pasta, rice dishes, cold preparation, egg and savoury dishes are discussed in theory and applied in practical classes.


City & Guilds Diploma in Patisserie - IVQ2

Higher levels of food and safety hazards are stressed in this program. The significance of kitchen maintenance and design are also included as well as budgeting, costing and control. The preparation of paste based products, desserts, cake baking, sponges, meringue based products and gelatine and egg set desserts are discoursed in theory and applied in practical classes. Students will also be able to learn how to prepare and bake chemically aerated and fermented products as well as cook fruit based desserts, make simple frozen desserts, prepare and use creams, fillings and glazes, prepare hot and cold sauces and learn the use of decorative mediums.


City & Guilds Advanced Diploma in Culinary Arts - IVQ3

Preparing those who are more interested in management roles. This level in the culinary arts teaches the students food safety operations and supervision, staff organization in the kitchen and ancillary areas, product development and presentations. A more in-depth knowledge in cultural dimensions of food, costing, budget, control and materials management is discoursed. The development and understanding of production systems, planning, organization, quality assurance of products and services including menu policy and planning are incorporated into kitchen managerial skills, training and team development.


CIEH – UK or Chartered Institute of Environmental Health – United Kingdom - Recognized as the world leader in food safety training, CIEH – UK accredited training provides courses for every sector in the food industry. In the USA, the CIEH trades under the name of the National Registry of Food Safety Professionals (NRFSP).

CIEH - UK Level Two Award in Food Safety in Catering
Provides basic and fundamental food hygiene knowledge for all types of food handlers. Students will be assessed with an objective type of exam. A full coloured student reference workbook entitled “Food Safety First Principles” which is used as a reference text for this training is provided.
